  • 2 tablespoons plain flour
  • 2 cups beef stock
  • Salt & pepper

For the mash:

  • 4–5 potatoes, peeled and chopped
  • Butter
  • Milk
  • Salt

👨🍳 Method

1. Cook the sausages

Heat a pan over medium heat and cook the sausages until browned and cooked through.
Remove and set aside.

2. Make the onion gravy

In the same pan, add butter and sliced onions. Cook slowly until soft and caramelised.

Sprinkle in the flour and stir through for 1–2 minutes.
Gradually add the beef stock, stirring to avoid lumps. Simmer until thickened.

3. Return sausages to the pan

Add sausages back into the gravy and simmer gently for 5–10 minutes.

4. Prepare the mash

Boil potatoes until soft, drain, then mash with butter, milk and salt until smooth.

5. Serve

Spoon mash onto plates, top with sausages and generous onion gravy.
