Valentine’s Day Steak for Two - Thick-Cut Scotch Fillet Share Plate with House-Made Garlic Butter

This thick-cut scotch fillet is made for sharing. Rich, juicy and full of flavour, it’s the kind of centrepiece that turns a simple dinner into something memorable. Ingredients (Serves 2)

  • 1 thick-cut scotch fillet (800g–1kg), room temperature
  • Salt flakes
  • Fresh cracked black pepper
  • 1 tbsp olive oil

House-Made Garlic Butter

  • 100g softened butter
  • 2 cloves garlic, finely minced
  • 1 tbsp chopped fresh parsley
  • Pinch of salt
  • Optional: squeeze of lemon juice

Method

1. Prepare the Garlic Butter

Mix softened butter, garlic, parsley and salt together until well combined.

Spoon onto baking paper, roll into a log and refrigerate until firm. Slice into rounds when ready to serve.


2. Bring Steak to Room Temperature

Remove the steak from the fridge 30–45 minutes before cooking. Pat dry with paper towel.

Season generously on both sides with salt and cracked pepper.


3. Cook the Steak

Heat a heavy pan or BBQ plate until very hot. Add olive oil.

Sear the steak for 3–4 minutes per side for medium-rare (adjust depending on thickness).

Turn only once for the best crust.

For extra flavour, you can add a knob of butter to the pan in the final minute and spoon it over the steak as it cooks.


4. Rest (Don’t Skip This Step)

Transfer the steak to a board and rest for 10 minutes. This keeps it juicy.


5. Slice & Serve

Slice thickly across the grain and arrange on a serving board.

Top immediately with slices of chilled garlic butter and let it melt slowly over the warm meat.
