Slow-Cooked Beef Rogan Josh

Rich, Tender and Made for Slow Cooking

Some dinners are worth letting simmer.

This week we're putting another spin on the Taste of India range with a rich Slow-Cooked Beef Rogan Josh, using fresh diced beef from Normanville Meat & Seafood and Taste of India Rogan Josh Simmer Sauce.

With just a little preparation, you can leave this one to slowly cook until the beef is beautifully tender and the sauce is rich and full of flavour.

Serve it with fluffy basmati rice and warm naan and you've got an easy, hearty dinner that's perfect for feeding the family.

Ingredients

From Normanville Meat & Seafood:

  • 1kg diced beef, chuck or other slow-cooking beef
  • 1 x 425g Taste of India Rogan Josh Simmer Sauce

You'll also need:

  • 1 tablespoon olive oil
  • 1 brown onion, sliced
  • 2 cloves garlic, crushed
  • ½ cup beef stock
  • 1 tablespoon tomato paste
  • Fresh coriander, to serve
  • Natural yoghurt, to serve
  • Basmati rice
  • Naan bread

Optional:

  • 1–2 potatoes, cut into chunks
  • Baby spinach
  • Fresh chilli
  • Extra natural yoghurt

Method

Step 1 – Brown the Beef

Heat the olive oil in a large frying pan over medium-high heat.

Working in batches, add the beef and brown it well on all sides.

Don't overcrowd the pan. Giving the beef a little room helps it develop a good colour and adds extra flavour to the finished curry.

Transfer the browned beef to your slow cooker.

Step 2 – Cook the Onion

Reduce the heat slightly and add the sliced onion to the same pan.

Cook for around 3–4 minutes until softened, then add the garlic and cook for another minute.

Transfer everything to the slow cooker.

Step 3 – Add the Rogan Josh Sauce

Pour in the Taste of India Rogan Josh Simmer Sauce and add the enclosed spice sachet.

Add the tomato paste and approximately ½ cup of beef stock, then stir everything together.

If you're adding potatoes, add them now.

Step 4 – Slow Cook

Cover and cook until the beef is tender:

Low: approximately 6–8 hours

High: approximately 3–4 hours

Cooking times can vary between slow cookers, so the best test is the beef itself. It should be tender enough to easily pull apart with a fork.

Step 5 – Finish the Curry

If you'd like to add some greens, stir through a handful of baby spinach during the final few minutes.

Taste the sauce and adjust the seasoning if required.

For a slightly creamier finish, you can also stir through a spoonful of natural yoghurt once the heat has been turned off.

Step 6 – Serve

Spoon the Beef Rogan Josh over steamed basmati rice and top with fresh coriander and a little natural yoghurt.

Serve with warm naan bread on the side to soak up the rich sauce.

Don't Have a Slow Cooker?

You can make this recipe in the oven too.

Use a heavy, oven-safe casserole dish with a lid and prepare the beef, onion and sauce as above.

Cover and cook at approximately 160°C for 2½–3 hours, or until the beef is beautifully tender. Check it occasionally and add a little extra stock if the sauce becomes too thick.

What Beef Is Best for Rogan Josh?

This is a recipe where slow-cooking cuts really shine.

Chuck beef is a great choice because the longer cooking time allows it to become tender while adding plenty of flavour to the sauce.

Make It Your Own

There are plenty of ways to change this one up.

Add potatoes for an even heartier meal, stir through spinach towards the end, add fresh chilli if you like some extra heat, or serve with cauliflower rice instead of basmati.

Leftovers are also excellent the following day once all those flavours have had even more time to develop.
