Slow Cooked Lamb Shanks with Rosemary Lamb & Garlic

Lamb shanks are one of those classic cuts that reward patience. Cooked low and slow, they become meltingly tender, rich in flavour and perfect for soaking up with creamy mash or crusty bread.

Why Lamb Shanks?
Lamb shanks are cut from the lower leg, meaning they’re full of connective tissue and flavour. When cooked slowly, that tissue breaks down into gelatin, creating a rich, silky sauce and fall-off-the-bone meat.
It’s simple food, done properly.
Ingredients
• 4 lamb shanks from Normanville Meat & Seafood
• 1 onion, diced
• 2 carrots, chopped
• 3 cloves garlic, crushed
• 2 cups beef or lamb stock
• 1 cup red wine (optional but recommended)
• 2–3 sprigs fresh rosemary
• 2 tablespoons tomato paste
• Olive oil
• Salt and cracked pepper
Method

Brown the shanks
Season generously with salt and pepper. Heat olive oil in a heavy-based pot and brown the shanks on all sides until golden. Remove and set aside. -
Build the base
In the same pot, sauté onion, carrot and garlic until softened. Stir in tomato paste and cook for a minute to deepen the flavour. -
Add liquid
Return the lamb shanks to the pot. Pour in the wine and stock. Add rosemary sprigs. The liquid should mostly cover the shanks. -
Slow cook
Cover and cook at 160°C for 2.5–3 hours (or on low in a slow cooker for 6–8 hours) until the meat is tender and falling off the bone. -
Finish the sauce
Remove the lid for the last 20–30 minutes if you’d like the sauce to thicken slightly.
Serving Suggestions
Serve over creamy mashed potatoes with seasonal greens, or alongside roasted vegetables and crusty bread to soak up the sauce.
