Proper Smoked Chicken Caesar (Done Right)

There’s nothing complicated about a good Caesar — but the difference is always in the chicken.
Using smoked chicken instead of plain grilled completely changes it. More flavour, more depth, and you don’t need to overthink the rest.

Here’s an easy way to put it to use.
Ingredients
- Smoked chicken (sliced or shredded)
- Cos lettuce (chopped)
- Crispy bacon (optional, but worth it)
- Croutons
- Parmesan cheese (shaved or grated)
Dressing:
- 1/2 cup whole egg mayonnaise
- 1 garlic clove (crushed)
- 2 anchovy fillets (optional)
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- Salt & pepper

Make the dressing
Mix everything together until smooth. Taste and adjust — more lemon if you like it sharper. -
Prep the base
Chop the cos and lay it out in a large bowl. -
Add the good stuff
Top with smoked chicken, bacon, croutons and parmesan. -
Dress it
Toss through the dressing just before serving.
Tip
Don’t overdress it — you want the flavour of the smoked chicken to come through.
