Ingredients (Serves 4–6)

1kg Normanville Meat & Seafood premium gravy beef, diced
-
2 tbsp plain flour
-
Salt and cracked black pepper
-
2 tbsp olive oil
-
1 large brown onion, diced
-
2 carrots, chopped
-
2 cloves garlic, crushed
-
2 tbsp tomato paste
-
330ml Guinness
-
1½ cups beef stock
-
2 tsp fresh thyme (or 1 tsp dried)

2 bay leaves
-
1 sheet puff pastry (or enough to cover dish)

1 egg, beaten (for glazing)
Optional: Add mushrooms for extra depth.
Method
1. Coat the Beef
Toss the diced gravy beef in flour, salt and pepper until lightly coated.
2. Brown for Flavour
Heat olive oil in a heavy-based pot. Brown the beef in batches — don’t overcrowd the pan. Remove and set aside.
3. Build the Base
In the same pot, sauté onion and carrots for 5 minutes until softened. Add garlic and tomato paste and cook for another minute.
4. Add the Good Stuff
Return the beef to the pot. Pour in the Guinness and let it simmer for 2–3 minutes to cook off the alcohol slightly. Add beef stock, thyme and bay leaves.
5. Slow Cook
Cover and simmer gently for 1½–2 hours, stirring occasionally, until the beef is fork-tender and the gravy has thickened beautifully.
Allow mixture to cool slightly.
6. Assemble the Pie
Preheat oven to 200°C. Spoon filling into a pie dish. Top with puff pastry, trim edges, and press to seal. Brush with beaten egg and cut a small steam vent.
7. Bake
Bake for 25–30 minutes until golden and crisp.
Rest for 5 minutes before serving.
