Halloumi & Chorizo Skewers with Honey-Lime Drizzle

Perfect for the BBQ or summer platters

Looking for something quick, tasty, and just a little different to throw on the BBQ this weekend? These grilled halloumi and chorizo skewers are packed with salty, smoky flavour and balanced beautifully with fresh cherry tomatoes and a zingy honey-lime dressing.

Made with just a handful of ingredients and ready in under 30 minutes, they’re perfect for summer dinners, entertaining, or a quick weeknight meal. Plus, they look great on a platter and taste just as good the next day – cold or hot.


Ingredients

For the skewers:

  • 250g halloumi, cut into 2cm cubes

  • 1 thick chorizo sausage, cut into slices (roughly 1–1.5cm)

  • 16 cherry tomatoes

  • Salad leaves and lime wedges, to serve

  • Wooden or metal skewers

For the honey-lime dressing:

  • 2 tablespoons olive oil

  • 1 tablespoon runny honey

  • Juice and zest of 1 lime

  • 1 teaspoon apple cider vinegar or white wine vinegar

  • Salt & cracked black pepper, to taste


Method

  1. Soak skewers: If using wooden skewers, soak them in water for 10–15 minutes to prevent burning on the grill.

  2. Assemble the kebabs: Thread the skewers alternately with tomato, halloumi, and chorizo – aim for 2–3 pieces of each per skewer.

  3. Mix the dressing: In a small jar or bowl, combine the olive oil, honey, lime juice and zest, vinegar, and seasoning. Shake or whisk well.

  4. Grill: Preheat a BBQ grill or griddle pan. Lightly oil the grill, then cook the skewers for 8–10 minutes, turning every few minutes until the halloumi is golden, the tomatoes are blistered, and the chorizo is crisp at the edges.

  5. Serve: Drizzle the warm skewers with the dressing, serve on a bed of salad leaves with extra lime wedges.


Tips & Variations

  • Vegetarian option: Skip the chorizo and add chunks of zucchini, capsicum, or mushrooms instead.

  • Make ahead: Thread the kebabs and prep the dressing earlier in the day – just store in the fridge until you’re ready to cook.

  • Leftovers: These are delicious cold or reheated. Try adding them to wraps or tossing with pasta and rocket for a next-day lunch.
