Guinness Beef Pie

Serves: 6–8

Prep Time: 25 minutes

Cook Time: 3–3½ hours


Ingredients

For the Filling

  • 1.5kg Chunk Steak from Normanville Meat & Seafood

  • 2 tablespoons olive oil

  • 2 brown onions, diced

  • 3 carrots, diced

  • 3 cloves garlic, crushed

  • 2 tablespoons plain flour

  • 440ml Guinness Stout

  • 2 cups beef stock

  • 2 tablespoons tomato paste

  • 1 tablespoon Worcestershire sauce

  • 2 bay leaves

  • 2 sprigs fresh rosemary

  • Salt and cracked black pepper

For the Pie

  • 2 sheets puff pastry

  • 1 egg, beaten


Method

Step 1 – Brown the Beef

Heat olive oil in a large heavy-based pot.

Season the beef and brown in batches until well coloured.

Remove and set aside.


Step 2 – Build the Flavour

Add onions and carrots to the same pot and cook until softened.

Add garlic and cook for a further minute.

Sprinkle over the flour and stir through.

Add tomato paste and Worcestershire sauce.


Step 3 – Create the Gravy

Slowly pour in the Guinness, stirring well.

Add beef stock, rosemary and bay leaves.

Return the beef to the pot.

Bring to a gentle simmer.


Step 4 – Slow Cook

Cover and cook on low heat for approximately 2½–3 hours, stirring occasionally.

The beef should be fork tender and the gravy rich and thick.

Allow the filling to cool slightly before assembling the pie.


Step 5 – Assemble the Pie

Preheat oven to 200°C.

Transfer filling into a large pie dish.

Top with puff pastry and trim the edges.

Brush with beaten egg.

Cut a small slit in the centre to allow steam to escape.


Step 6 – Bake

Bake for 30–35 minutes until golden brown and crisp.

Allow to rest for 10 minutes before serving.
