Easy Butter Chicken Meatballs

Ingredients
From Normanville Meat & Seafood:
- 500g fresh chicken mince
- 1 x 425g Taste of India Butter Chicken Simmer Sauce
You'll also need:
- ½ cup breadcrumbs
- 1 egg
- 1 small garlic clove, crushed
- 1 tablespoon fresh coriander, finely chopped
- ½ teaspoon ground cumin
- Salt and pepper
- 1 tablespoon olive oil
- ¼–½ cup thickened cream, optional
- Fresh coriander, to serve
- Basmati rice
- Naan bread
Method
Step 1 – Make the Meatballs
Place the chicken mince, breadcrumbs, egg, garlic, coriander and cumin into a large bowl.
Season lightly with salt and pepper and mix until just combined.
Roll the mixture into small meatballs, roughly the size of a golf ball.
Try not to overwork the mixture as this will help keep the meatballs tender.
Step 2 – Brown the Meatballs
Heat the olive oil in a large frying pan over medium heat.
Add the chicken meatballs and cook, turning carefully, until lightly browned on all sides.
They don't need to be completely cooked through at this stage as they'll finish cooking in the sauce.
Step 3 – Add the Butter Chicken Sauce
Pour the Taste of India Butter Chicken Simmer Sauce into the pan around the meatballs.
Add the enclosed spice sachet and gently stir through the sauce without breaking up the meatballs.
Bring to a gentle simmer.
Step 4 – Simmer
Reduce the heat and cook for approximately 15 minutes, turning the meatballs occasionally, until they're completely cooked through and the sauce has thickened.
For an extra creamy finish, stir through a little thickened cream during the last few minutes.
Step 5 – Serve
Serve the Butter Chicken Meatballs over fluffy basmati rice and spoon plenty of the creamy sauce over the top.
Finish with fresh coriander and serve with warm naan bread on the side.
Make It Your Own
This recipe is easy to adapt depending on what you have at home.
Try adding baby spinach to the sauce during the last few minutes of cooking, or throw in some peas for an easy way to add extra vegetables.
For something different, skip the rice and serve the meatballs with naan, roti or even over mashed potato.

The meatballs can be prepared earlier in the day and kept covered in the fridge until you're ready to cook.
