Easy 30-Minute Chicken Korma Recipe
Creamy, Mild and Full of Flavour
For the final recipe in our Taste of India series, we're finishing with a family favourite that's creamy, comforting and incredibly easy to make at home – Chicken Korma.
Using Taste of India Korma Simmer Sauce and fresh chicken from Normanville Meat & Seafood, you can have a delicious Indian-inspired dinner on the table in around 30 minutes.
Korma is a great choice for the whole family. It's mild, creamy and aromatic without being overly spicy, making it perfect for an easy midweek dinner. Serve it with fluffy basmati rice and warm naan bread and dinner is sorted.
Ingredients
From Normanville Meat & Seafood:
- 600g fresh chicken breast or chicken thigh, diced
- 1 x 425g Taste of India Korma Simmer Sauce
You'll also need:
- 1 tablespoon olive oil
- 1 small brown onion, finely diced
- ½ cup coconut cream or thickened cream, optional
- Fresh coriander, to serve
- Basmati rice
- Naan bread
Optional extras:
- Toasted cashews
- Baby spinach
- Steamed green beans
- Roasted cauliflower
Method
Step 1 – Prepare the Chicken
Cut the chicken into even, bite-sized pieces.
Chicken breast works beautifully for a quick weeknight meal, while chicken thigh is a great option if you prefer an extra tender and juicy result.
Step 2 – Cook the Onion
Heat the olive oil in a large frying pan over medium heat.
Add the diced onion and cook for 3–4 minutes until soft and lightly golden.
Step 3 – Brown the Chicken
Add the diced chicken to the pan and cook for approximately 4–5 minutes, turning occasionally, until lightly browned.
The chicken doesn't need to be completely cooked through at this stage as it will finish cooking in the sauce.
Step 4 – Add the Korma Sauce
Pour the Taste of India Korma Simmer Sauce into the pan.
Add the enclosed spice sachet and stir everything together until the chicken is well coated.
Reduce the heat and gently simmer for around 15 minutes, stirring occasionally, until the chicken is cooked through and the sauce is rich and creamy.
Step 5 – Make It Extra Creamy
For an even richer korma, stir through a little coconut cream or thickened cream during the final few minutes of cooking.
This step is completely optional – the simmer sauce is already designed to give you that classic mild and creamy korma flavour.
Step 6 – Serve
Spoon your Chicken Korma over freshly cooked basmati rice and finish with a little fresh coriander.
Serve with warm naan bread on the side to soak up the sauce.
Make It Your Own
One of the best things about korma is how easy it is to adapt.
Try adding:
- Baby spinach for some extra greens
- Roasted cauliflower or pumpkin
- Green beans
- Toasted cashews for some crunch
- A spoonful of natural yoghurt when serving
You can also swap the chicken for lamb or use a combination of vegetables and chickpeas for a meat-free version.
Our Tips for a Great Chicken Korma
Don't cut the chicken too small. Slightly larger pieces will stay juicy while the sauce simmers.
If you're using chicken breast, avoid overcooking it. Once the chicken is cooked through, it's ready to serve.
Chicken thigh is particularly good if you want a richer result and is very forgiving when simmered.
And don't forget the naan – you'll want something to mop up that creamy sauce!
