Crispy Crumbed Fish & Chips

Ingredients

For the Fish

  • 800g fresh fish fillets from Normanville Meat & Seafood (whiting, flathead, gummy shark, hake or your favourite local catch)
  • 1 cup plain flour
  • 2 eggs, lightly beaten
  • 2 cups panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and cracked black pepper
  • Olive oil spray or vegetable oil for cooking

For the Chips

  • 4 large potatoes, cut into chips
  • 2 tablespoons olive oil
  • Sea salt

To Serve

  • Lemon wedges
  • Tartare sauce
  • Fresh garden salad

Method

Prepare the Chips

Preheat your oven to 220°C.

Place the cut potatoes into a bowl and toss with olive oil and a sprinkle of sea salt.

Spread onto a lined baking tray and bake for 35–40 minutes, turning halfway through, until golden and crispy.


Crumb the Fish

Pat the fish fillets dry with paper towel.

Place flour into one shallow bowl and season with salt and pepper.

Place beaten eggs into a second bowl.

Combine breadcrumbs, paprika and garlic powder in a third bowl.

Coat each fish fillet in flour, then egg, then breadcrumbs, pressing gently to ensure an even coating.


Cook the Fish

Oven Method

Place crumbed fish onto a lined baking tray.

Lightly spray with olive oil.

Bake at 200°C for 12–15 minutes until golden and crispy.

Pan Fry Method

Heat a shallow layer of oil in a large frying pan.

Cook fish for 3–4 minutes per side until golden brown and cooked through.


Serve

Pile the crispy fish onto plates alongside hot chips.

Serve with lemon wedges, tartare sauce and a fresh salad.

Simple, fresh and absolutely delicious.
