Classic Rosemary Lamb Garlic Lamb Leg Roast

Easter is one of those special times of year where everything slows down a little. Long lunches, time with family, and a table full of good food shared together.

For us, it’s hard to go past a classic lamb roast — and not just any lamb, but a beautifully cooked rosemary and garlic lamb leg, roasted until tender with that perfect golden finish.

It’s simple, it’s traditional, and when you start with premium quality lamb, it speaks for itself.

Serves: 6–8

Prep time: 15 minutes

Cook time: 1.5–2 hours


Ingredients

  • 1 whole lamb leg (2–2.5kg), from Normanville Meat & Seafood
  • 4–6 cloves garlic, sliced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons olive oil
  • Zest of 1 lemon
  • Sea salt flakes
  • Freshly cracked black pepper
  • 1 cup chicken stock or white wine

Optional:

  • Potatoes
  • Pumpkin
  • Carrots
  • Red onion

Method

  1. Preheat oven to 180°C.
  2. Prepare the lamb
    Using a small knife, make small incisions across the lamb and insert slices of garlic into each.
  3. Season well
    Rub with olive oil, rosemary, lemon zest, salt and pepper, making sure the entire surface is coated.
  4. Roast
    Place into a roasting tray with stock or wine in the base. Roast for approximately 20 minutes per 500g for medium (adjust to your preference).
  5. Add vegetables (optional)
    Add your vegetables to the tray for the final hour of cooking.
  6. Rest before carving
    Remove from oven and rest for at least 15–20 minutes before slicing.
