Creamy Beef Stroganoff

Serves: 4–6

Ingredients

  • 800g premium beef strips or thinly sliced rump steak from Normanville Meat & Seafood
  • 2 tablespoons olive oil
  • 1 brown onion, sliced
  • 3 cloves garlic, crushed
  • 250g mushrooms, sliced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • 1 cup beef stock
  • 300ml thickened cream
  • 1 tablespoon Dijon mustard
  • Salt and cracked black pepper
  • Fresh parsley to serve

Method

1. Brown the Beef

Heat olive oil in a large frying pan over high heat.

Cook the beef in batches until browned. Don’t overcrowd the pan — this helps lock in flavour and gives the beef a beautiful caramelised finish.

Remove and set aside.


2. Build the Flavour

Reduce heat slightly and add onion and mushrooms to the pan.

Cook until softened and golden, then add garlic and paprika.

Stir through tomato paste, Worcestershire sauce and Dijon mustard.


3. Create the Sauce

Pour in beef stock and simmer for 5 minutes to allow the flavours to develop.

Reduce heat and stir through the cream.

Return the beef to the pan and simmer gently for 10–15 minutes until tender and coated in the rich sauce.

Season to taste with salt and cracked pepper.


4. Serve

Finish with fresh parsley and serve over creamy mash, pasta or rice.
