BBQ King Prawns with Garlic, Chilli & Lemon Butter
Serves: 4
Prep Time: 10 minutes
Cook Time: 6 minutes
Ingredients:

16 green king prawns (in shell)

2 tablespoons olive oil
-
150g good-quality butter (we love Western Star or any local spreadable)

2 garlic cloves, thinly sliced
-
1 long red chilli, finely chopped (deseeded if you prefer it milder)

Zest and juice of 1 lemon
-
2 tablespoons fresh flat-leaf parsley, chopped
-
Salt and freshly cracked black pepper

1 additional lemon, halved (for grilling and serving)
Method:

Make the garlic chilli butter:
In a small saucepan, melt the butter over low heat. Add the garlic and chilli and gently cook for 30 seconds to infuse the flavour. Remove from heat, then stir through the parsley, lemon zest and juice. Season well with salt and pepper. Set aside. -
Prep the prawns:
Toss the whole prawns in olive oil and season lightly with salt and pepper. -
Grill the prawns:
Preheat your BBQ to a high heat. Once hot, place the prawns directly on the grill. Cook for 3 minutes on one side, then flip and cook for another 2–3 minutes, or until they turn bright pink and slightly charred. At the same time, place the halved lemons on the BBQ cut-side down to caramelise. -
Serve:
Arrange the cooked prawns on a platter and drizzle over the warm garlic chilli butter. Serve with the grilled lemon halves for squeezing over and a fresh green salad or crusty bread on the side.
