1. Slow-Cooked Garlic & Herb Bolar Roast
Uses:
- 1.5kg Bolar Roast
Ingredients
- 1.5kg Bolar Roast
- 2 onions, sliced
- 4 cloves garlic, crushed
- 3 carrots, chopped
- 2 cups beef stock
- 2 tbsp Worcestershire sauce
- 2 sprigs rosemary
- Salt and pepper
Method
- Season the roast well with salt and pepper.
- Brown in a hot pan on all sides.
- Place onions and carrots in the slow cooker.
- Add the roast, garlic, stock, Worcestershire sauce and rosemary.
- Cook on Low for 8 hours or High for 5 hours.
- Slice and serve with creamy mashed potato, roasted vegetables and plenty of gravy.
Tip: Leftovers make fantastic roast beef sandwiches the next day.
2. One-Pot Beef & Vegetable Casserole
Uses:
- 1kg Diced Beef
Ingredients
- 1kg Diced Beef
- 2 carrots
- 2 celery stalks
- 1 onion
- 2 potatoes
- 2 cups beef stock
- 2 tbsp tomato paste
- 1 tbsp plain flour
- 1 tsp thyme
Method
- Brown the diced beef in batches.
- Cook onion until softened.
- Stir through tomato paste and flour.
- Add vegetables, stock and thyme.
- Simmer gently for 2½ hours (or cook in the slow cooker for 6–8 hours).
- Serve with crusty bread or buttery mashed potato.
Tip: This recipe freezes beautifully for busy weeknights.
3. Creamy Chicken & Mushroom Tray Bake
Uses:
- 1kg Chicken Thigh Fillets
Ingredients
- 1kg Chicken Thigh Fillets
- 300g mushrooms
- 2 cloves garlic
- 300ml pouring cream
- 1 tbsp wholegrain mustard
- Fresh thyme
- Parmesan cheese (optional)
Method
- Place chicken thighs into a baking dish.
- Add sliced mushrooms and garlic.
- Mix cream with mustard and pour over the chicken.
- Sprinkle with thyme and Parmesan.
- Bake at 180°C for 40–45 minutes until golden.
- Serve with steamed vegetables or rice.
Tip: Chicken thighs stay tender and juicy, making this an easy family favourite.
